Peanut Butter Cookies

Temperature 350 ° F. |
1/2 cup shortening |
1 egg, beaten |
1/2 teaspoon baking soda |
1/2 cup granulated sugar |
1 teaspoon vanilla |
1/2 teaspoon salt |
1/2 cup brown sugar |
1 cup moist peanut butter |
1 1/2 cups sifted flour |
Cream Shortening: add sugar gradually and cream well.
Add egg, vanilla and peanut butter.
Sift baking soda, salt and flour together and add to creamed mixture.
Roll into balls and press them with a fork to flaten slightly on an ungreased cookie sheet.
Sprinkle lightly with sugar if desired.
Yeilds 4 dozen.
